Oatmeal Pancake

Ingredients:
1/2 c. (cooked) steel cut oats
3  egg whites
1/2 tsp cinnamon
1/4 tsp baking powder
1 tsp. coconut oil
Splash of vanilla (optional)

Method:

1. Combine cooked oats, egg whites, cinnamon, baking powder and sweetener (optional).  2. Melt coconut oil in a pan.
3. Fry your oatmeal pancake in the oil until lightly browned and set.  Flip and cook an additional 1-2 minutes.

21 day fix approved! One yellow, 1/2 red and 1 spoon. Top with fruit (purple container) if you wish.  ENJOY!
